It’s meant to be symbolic, as is the fact that Hannibal stabbed him in the belly.
More prosaically, he also used that type of knife in the novel.
He stole it from Wills house.
It was a sexy knife and honestly more attractively linked to Will than something like one of his shirts wouldve been, especially since will wouldnt have more than a few shirts at a time and would miss it.
On the other hand, will isnt likely to have any linoleum based projects anywhere soon. It was probably gathering dust and needed a little care
Hannibal was quite please with himself, polishing the knife, sharpening it, taking it out occasionally to admire. Its a workmans tool, it has a clear purpose, vicious without the instant fear something like a jack knife
He had hoped to give it back to Will on their first kill together, but instead decided to give it back to him… in a more petulant way

On a less glib note, the design of this style of knife - blade on the inside of a curve, no blade on the outside of the curve, is used for gutting and dressing animals specifically so as not to nick or damage the intestines. In other words, it’s a tool purpose built for opening an animal up without damaging any of their insides. In other words, like Abighost said, he knew exactly how to cut and he wanted Will to live.
So what you’re saying is, once he realized Will had betrayed him, he planned out exactly how he was going to cut him and went out and bought a knife specifically for that purpose.

I’m a veterinarian, not a human medic, but mammals are mammals. If you don’t eat, you don’t poop, so fecal mess isn’t a worry in unconscious patients beyond about the first twelve hours after admission (urine still is though. That big black box of Freddie’s would have been hiding a urinary catheter too).
Laparascopic surgery still isn’t common in animals, so we make very large surgical incisions in the abdomens of dogs and cats every day, and they have no trouble pooping afterwards. We do make the incision the other way, between the muscle fibres, not across them, because it heals faster that way, but traumatic abdominal injuries aren’t always so thoughtful and those animals don’t need colostomy bags either. The only reason I can imagine Will had one is because his large intestine needed repairing. The large intestine is more delicate than the small because it’s much thinner walled, and surgical wounds in it have a significantly higher risk of complications and breakdown than small intestinal wounds. You can do just about anything with the small intestine and have a fully functional gut the day after surgery.

The question of whether Hannibal is good queer rep is one I’ve done a lot of thinking about, because a lot of the time taking a villain and making them queer is a method of subtly saying “queer people are evil”.
Hannibal the show manages to avoid that though, in several pretty cool ways that manage to actually make it a good choice. I imagine that’s largely because Bryan Fuller is himself gay and so understands how to portray queer characters in a respectful and relatable manner without playing into unfortunate stereotypes.
With Hannibal, we actually get almost the exact opposite of that. Is Hannibal visibly unusual? Yes. Is he queer? Yes. But those things are used as methods of making him endearing and relatable. We connect to Hannibal through his love for Will—if he didn’t become a Gay Disaster, he’d be way less likeable. We see him in his ridiculous suits and no one in the narrative laughs at them or says “we should have known, look at him he’s so weird”. Instead it’s just a quirk that’s generally not seen as negative, both inside the story and by the viewer. It’s the difference between “what a creepy weirdo” and “what an endearing dork” and, from a narrative perspective, they remain firmly on the Endearing Dork side.
So instead of taking an iconic villain and making him queer to make him creepier, they took an iconic villain and made him queer to make him more human. And that’s a kind of queer rep one almost never sees.
Generally speaking when a character in media is canonically queer, that’s the whole Point of their character. It’s the thing that makes them stand out from other characters, and if you were describing their character to someone unfamiliar with the media, it would be natural to reference them as “the gay one”. Even in other genre media, there’s a sense that being queer is a distinctive standout trait, which can be uncomfortably othering. In real life, queer people rarely exist in isolation, and while for many of us our sexuality is an important part of our identity, it isn’t how we’re defined.
Hannibal the show manages to dodge this in two very effective ways.
First of all, Hannibal isn’t the only queer character. He and Will aren’t the only queer couple. Having more queer characters enables the show to have more leeway in terms of healthy portrayals of queer relationships—we don’t have only one couple that has to represent he shows entire opinion on queer people. In a show where there are only five or six regulars, three of them end up in same sex relationships and Margot, the fourth main queer character, gets a lot of screentime and important storylines. We have Alana and Margot’s incredibly healthy and beneficial relationship to hold up in contrast to Will and Hannibal’s unhealthy one, and so the takeaway doesn’t end up being that Queer Relationships are Unhealthy, just that queer relationships can be good or bad or whatever, like any relationships.
Which brings us to the second point: this is a show with four queer characters, and absolutely no storylines that revolve around them being queer (I’m not including their love stories in that, because the love stories don’t revolve around them being queer, they’re told just like any love story would be except that the characters are the same gender). They’re characters with lots of interesting and complex traits, who happen to fall in love with someone of the same gender.
They manage to find a great balance wherein the characters’ queerness is acknowledged (like the scene I talked about yesterday) and yet it doesn’t become a Big Deal in an othering way.
It means a lot to me to see a story told where queer characters are allowed to be people outside their sexuality and yet not be written as if they were straight people. It means a lot to me to have a show where queer love is written as something that is a force of good in people’s lives instead of just a source of pain. And it means a lot to me that this ridiculous queer horror romcom exists.

All of this, yes, this is why it works so well. The relationships are portrayed as relationships, and they just happen to be same sex.

Will hadn’t expected the tailor’s shop to look quite so much like a small art gallery. Dark wood floors glowed with a patina of age and care. Drawings covered the neutral walls, each one lit just so. He saw no mirrors, no racks of clothes, not even a bolt of cloth. For a second, he thought he’d walked into the wrong store, but then he saw the tailor and he knew he hadn’t.
The cloth measuring tape draped around his neck would’ve been a clue if Will had needed one. He didn’t. The man wore a suit jacket pieced and pinned together, and the way he was examining his own outstretched arm, or rather the sleeve around it, told Will everything he needed to know.
“You make your own suits too?” Will asked.
Hannibal Lecter turned toward him and bowed slightly from the waist. “Of course. Who else could I trust? Will Graham, I presume?”
I don’t bother much with this kind of AU, I prefer to read about Will and Hannibal as themselves, but this short piece is just gorgeously erotic all through.

I promise you guys. Absolutely 0 writers are bothered by you talking to them about their fics. If you want to know a detail or are confused about something they are almost definitely sitting ready with an answer that they are excited to talk about.

Summary:
When an unexpected encounter with a mysterious wizard dramatically changes Yuuri Katsuki’s life, he finds that he must leave his family and career and journey to the Wastes of Ingary in search of a wizard named Viktor, who apparently is the only one who can help Yuuri break the curse that has been placed upon him. What he doesn’t expect is to find himself living in the Moving Castle of Nikiforov, a wizard rumored to seduce and then devour the hearts of his lovers, or to become entangled in breaking a curse that is not his own.
Notes:
If you hadn’t guessed already, this story is a crossover between Yuri!!! on Ice and Howl’s Moving Castle. All of the characters are written to match their personalities in Yuri!!! on Ice, save where circumstances require them to change along with the story. The plot follows along similar lines of the movie with some parallels to the book, but much of the story has been reworked and changed, especially in regards to Howl/Viktor’s history and character.
I don’t currently have a Beta, so I apologize in advance for any mistakes! If anyone is interested in being a beta reader for me, please let me know! :-)
